Nö, denn weder df -h noch mount zeigen Dir die "echten" mounts an, nur einen Teil.

Eigentlich müsste es z.B. "richtig" (vollständig) heißen:
/dev/sdb1/swap on /swap type ext3 (rw,noatime,nodiratime,data=ordered)
/dev/sdb1/swap/epg on /var/epg type ext3 (rw,noatime,nodiratime,data=ordered)
/dev/sdb1/swap/logo on /usr/local/share/neutrino/icons/logo type ext3 (rw,noatime,nodiratime,data=ordered)
/dev/sdb1/swap/emu on /var/emu type ext3 (rw,noatime,nodiratime,data=ordered)
/dev/sdb1/swap/keys on /var/keys type ext3 (rw,noatime,nodiratime,data=ordered)

Und ja, es wird --bind benutzt. Damit werden die org. Verzeichnisse lediglich "überlagert", der Inhalt bleibt also erhalten.

OK, jetzt ist's verstanden!

Bei meinen Unix-Servern auf meiner Arbeit hätte das nämlich doch etwas anders ausgesehen

Durchaus möglich, wobei Ubuntu nur nen einfaches "none on..." schreibt bei den Systempfaden. Lediglich die HDD wird "normal" geschrieben mit "/dev/sda1 on / type...".
